Fig & Ginger Cake

Ingredients

  • New England Larder Vanilla Figs chopped

  • 4 tbsp Vanilla Figs syrup

  • 125g Butter

  • 1 cup Brown sugar

  • 2 eggs

  • 2 cups Self-raising flour

  • ½ cup Sour cream

  • ¼ cup chopped crystalised ginger

 

Icing:

  • 1 cup confectioners’ sugar

  • Vanilla figs syrup

Baking Ingredients

Method

  • Preheat oven to 180*

  • Cream together butter and sugar until creamy

  • Add 2 eggs, beating between each egg until fully combined

  • Further cream together the syrup from New England Larder Vanilla Figs

  • Fold in self-raising flour and sour cream, ensuring ingredients are evenly mixed through

  • Add crystalised ginger and chopped Vanilla Figs, quickly combining before pouring into a prepared cake pan.

  • Bake until a knife comes out clean

  • To create the icing simply combine confectioners’ sugar and Vanilla Figs Syrup to create a smooth icing to pour over cooled cake.
