Fig & Ginger Cake


Ingredients

New England Larder Vanilla Figs chopped

4 tbsp Vanilla Figs syrup

125g Butter
-
1 cup Brown sugar
-
2 eggs
-
2 cups Self-raising flour
-
½ cup Sour cream
-
¼ cup chopped crystalised ginger
Icing:
-
1 cup confectioners’ sugar
-
Vanilla figs syrup

Method

Preheat oven to 180*
-
Cream together butter and sugar until creamy
-
Add 2 eggs, beating between each egg until fully combined

Further cream together the syrup from New England Larder Vanilla Figs
-
Fold in self-raising flour and sour cream, ensuring ingredients are evenly mixed through
-
Add crystalised ginger and chopped Vanilla Figs, quickly combining before pouring into a prepared cake pan.

Bake until a knife comes out clean

To create the icing simply combine confectioners’ sugar and Vanilla Figs Syrup to create a smooth icing to pour over cooled cake.
