New England Larder

Prune & Pistachio Cake

Ingredients

125g Butter

1 Cup Caster Sugar

2 Eggs
-
1/12 Cups ground Pistachios

2 Cups Self-raising Flour

¾ Yogurt
-
¾ Cup New England Larder Prunes in Shiraz Syrup
Method

Pre-heat oven to 180*

Cream together butter and sugar with a beater or stand mixer

Add 2 eggs, one at a time and once combined add pistachios and mix well.

Stir in self raising flour until batter is smooth and even. Add yogurt and mix until combined.

Finally, combine New England Larder Prunes in Shiraz Syrup with batter, pour into a prepared cake pan and bake until knife comes out clean.
