Prune & Pistachio Cake

Ingredients

  • 125g Butter

  • 1 Cup Caster Sugar

  • 2 Eggs

  • 1/12 Cups ground Pistachios

  • 2 Cups Self-raising Flour

  • ¾ Yogurt

  • ¾ Cup New England Larder Prunes in Shiraz Syrup

Method

  • Pre-heat oven to 180*

  • Cream together butter and sugar with a beater or stand mixer

  • Add 2 eggs, one at a time and once combined add  pistachios and mix well.

  • Stir in self raising flour until batter is smooth and even. Add yogurt and mix until combined. 

  • Finally, combine New England Larder Prunes in Shiraz Syrup with batter, pour into a prepared cake pan and bake until knife comes out clean.
