Chocolate Prune Syrup Cake

Ingredients

125g Butter

1 1/3 cup Brown sugar

3 Eggs

½ cup Cooking Cocoa

1 1/3 cups Self-raising Flour

½ cup Milk
-
New England Larder Prunes in Shiraz Syrup with 1 ½ tbsp syrup

Icing:
-
100g butter
-
1 ½ cup confectioners’ sugar

½ cup cocoa
Method
-
Preheat oven to 180*
-
Cream together butter and brown sugar with a beater or stand mixer, slowly adding eggs until a soft mixture is formed.

Stir in cocoa and self-raising flour until combined
-
Add in milk and prunes with syrup, stirring until smooth and combined
-
Pour into a prepared cake pan, baking until knife comes out clean
-
For the icing, cream butter, confectioners’ sugar, and cocoa to form a soft, buttery icing.
