Spiced Pumpkin Quiche

New England Larder Spiced Pumpkin Chutney

Diced Bacon

Camembert
-
Shallots
-
Shaved parmesan

6 eggs

Thickened cream
Method

Preheat oven to 150*

Line a pie dish with 2 sheets of puff pastry

In a small pan on high heat, crisp up 5 rashers of diced bacon and transfer to mixing bowl

Add finely chopped full round of camembert, 2-3 dices shallots, 2tbsp shaved parmesan and 4 tbsp spiced pumpkin chutney, mix thoroughly then pour into pastry dish

Using the same bowl, beat together 6 eggs and 2/3 cup thickened cream until well combined and lightly frothy.

Pour egg mixture into pastry dish over bacon and place in the oven to bake until lightly browned on tip.

Serve with a simple salad or chop up and freeze for a quick healthy mid-week brekky!
