Spiced Pumpkin Quiche

Ingredients

  • New England Larder Spiced Pumpkin Chutney

  • Diced Bacon

  • Camembert

  • Shallots

  • Shaved parmesan

  • 6 eggs

  • Thickened cream

Method

  • Preheat oven to 150*

  • Line a pie dish with 2 sheets of puff pastry

  • In a small pan on high heat, crisp up 5 rashers of diced bacon and transfer to mixing bowl

  • Add finely chopped full round of camembert, 2-3 dices shallots, 2tbsp shaved parmesan and 4 tbsp spiced pumpkin chutney, mix thoroughly then pour into pastry dish

  • Using the same bowl, beat together 6 eggs and 2/3 cup thickened cream until well combined and lightly frothy.

  • Pour egg mixture into pastry dish over bacon and place in the oven to bake until lightly browned on tip.

  • Serve with a simple salad or chop up and freeze for a quick healthy mid-week brekky!
