Lamb Kofta with Fig & Apple Yoghurt Dressing

Ingredients

500g Lamb mince

½ diced onion
-
¼ cup breadcrumbs

2 tsp Cypress Ridge Crushed Garlic

2 tbsp fresh chopped coriander

2 tsp cumin
-
2tsp paprika
-
1 tsp cayenne pepper
-
Pinch of salt and pepper

Yogurt Dressing:
-
New England Larder Dried Fig & Apple Chutney
-
Greek Yogurt
-
Lemon
-
Cypress Ridge Crushed Garlic

Pinch of salt and pepper
To serve:

Flatbred
-
Chopped lettuce
-
Sliced tomato & Sliced onion Drizzled with lemon
Method

In a medium bowl combine lamb mince, onion, breadcrumbs, garlic and spices, mixing well with clean hands until well combined.

Divide the meat mixture into even koftas ready for cooking.

Preheat oil in a large skillet over medium heat and cook koftas in batches, turning until evenly browned.

To create yogurt dressing, combine all ingredients and mix well.

Serve as a side to dip, drizzle or spread over koftas on flatbread and salad.
